Foley Classic Spaghetti
Oh, this is the big one. It’s simple, but it’s ours.

I grew up on this sauce. It’s one of the few my parents passed on. It’s amazingly simple, and I can’t believe anyone buys their sauce from a jar. My folks altered it in the few years before I left home, but the following sauce mostly an unaltered version. Granted, we altered it a bit, to. So there you go.
Actually, I have no idea of what the recipe is. I just always ‘cooked it.
Still, very simple. New ingredients include ground chicken and roasted tomatoes…but you’ll get the idea. Use hamburger if you’d like.
Key here is that it makes a LOT of sauce.. This recipe is to make 1 meal for four, then to make a lasagna a few nights later.
As a college student, Don would make this recipe, then live off it for a week.
Ingredients
Olive oil
Pepper grinder
1 Sweet Onion
1 LB of ground chicken
2 TBS minced garlic
3 large cans of crushed tomatoes
2 16oz cans of roasted diced tomatoes
2 TBS of oregano
2 TBS of basil
Directions
In a big pot (we like a copper-bottom stainless, but most anything will do) put down the olive oil, heat it up, and put in the onion and garlic. Heat to transparent onion.
Put in the chicken (or hamburger). Brown through. Season with fresh ground pepper.
Pour in the 3 large cans of crushed tomatoes, the 2 cans of roasted and drop the temperature to medium high. The goal here is to come up with a slow boil…but don’t burn the bottom. Stir often.
Meanwhile, put in the dried oregano and basil.
Slowly bring the batch to a boil. Then simmer. Cover and stir often.
It really doesn’t get easier than that. About an hour later you have a great sauce.
Serve over Angel Hair Pasta (our preference) with a dusting of shredded parmesan.
Our warning here. Don’t use that dried parmesan. It sucks. We haven’t eat it for well over two decades. Shred your own or buy pre-shredded. We actually have gotten used to Public shredded. Anything but that stuff that isn’t refrigerated. Ick.
Side note: This Recipe Blog really is about sharing our recipes with our daughters. We want them to have the recipes of meals we enjoyed as a family. And this recipe is a classic, not only because we’ve cooked it for over 20 year, but because Don’s parents taught him the basics years before that. Sure, we’ve changed it over the years…but when you sit down to eat, for us, it tastes like home.
