Waffle Gyro Dinner

Gyro Waffles

or…Fun with the Waffle Iron 2.0, Chicken Gyros with a tzatziki sauce sauce.

This was on my mind once the waffle iron made it’s Amazon Appearance on my doorstep. This is based on a recipe I’ve been cooking for years (decades?). Normally the mixture would go on a grill, and then placed on a bun with yogurt, red bell pepper slices and katamala olives. And it is really good. Here’s the link to that.

But for tonight, I wanted to try a couple different things. Fresh spinach and a classic tzatziki sauce. And I also made this from half a pound of ground chicken, so I reduced the amount greatly so I had two portions of 1/4 lb chicken. But the recipe I’m about to share will be the full recipe. Adjust accordingly.

Ingredients

Olive oil
Onion, minced.
A couple of cups of fresh baby spinach
Oregano
1/4 lb of crumbled feta cheese
1 package of ground chicken or turkey (we like chicken better)
1 tbs grill seasoning, we like McCormic’s Chicken
1/3 cucumber, sliced
1 cup greek yogurt
Handful of Kalamata olives
Juice of half a lemon
Sliced roasted bell peppers via a jar
Garlic, I like jarred minced for this
Fresh dill

Instructions

My winter hydroponic dill is going crazy, so it is key to tonight’s meal. It’s in the meat mix, the sauce, and as an adornment.

In a medium mixing bowl and put in the spinach,onion, garlic and oregano. Add the crumbled feta, chicken and seasoning and mix it up by hand. Pour in a drizzle of olive oil, and keep mixing it.

Spray you waffle iron with some olive oil. Divide the above into 1/2 cup portions (or whatever works for your waffle iron) and then cook on a medium high heat for 8-10 minutes.

While this cooks, make your sauce. Mix the yogurt with the lemon juice. Put in some black pepper, dill and garlic. Stir.

Plate the ChickenGyroWaffle, top with the sauce, a thin sliced cucumber, Kalamata olives and dill.

While this sounds complicated, I pulled it off in about 30 minutes, and it tasted great. Absolutely a keeper.
