Waffle Meatballs with a Marinara Sauce
I’m still on my WaffleIronKick™. Simply put, I’m cooking meat that will take advantage of the traditional nooks of a waffle, meant for syrup. And I’m think various sauces. And the classic sauce is a marinara.
So tonight I made a waffle meatball…and the results were absolutely stunning. This is one of the best tasting meals I’ve prepared, and I’ve made a few.
There are 3 parts to this recipe. 1) The Sauce. 2) The Meatballs and 3) The Additions. Each one is responsible for how well this turned out.
Start with the sauce so it can meld while you do the rest. My traditional small batch sauce is:
THE SAUCE:
1/2 onion diced, sauteed in onion
2 cloves of minced garlic, add just before the onion is done
1 15 oz can of tomato sauce
1 tspn onion powder
1 tspn dry basil
1 tspn oregano
Bring to a mild boil, reduce to simmer
THE MEATBALLS:
Since this I’ve been cooking low carb, this meatball has no breadcrumbs. You would never know it.
In a large bowl mix….
2 lbs meat. I used 1 lb of 80/20 ground chuck and and 1 lb of ground pork.
Two eggs
Handful of parsley
3/4 cup of shredded parmesan
1/2 cup of almond flour
1 heaping tspn of garlic powder
1 heaping stpn of onion powder
1 tspn of black pepper
1 Tbsp dry basil
1 Tbsp dry orgeano
Mix well, form into meatballs. I was shooting for 8, but I came up with 7.
I put two of these into my medium-high heated waffle iron for about 10 minutes…until nice and crispy on the outside.
THE ADDITIONS
I used my Shirataki Noodles tonight. I washed, dried them and then air-fried them at 370° for 8 minutes. Then I sauteed them in butter and garlic for about 5 minutes, then pushed them to one side and put in some thin sliced yellow bell peppers.
My other additions are mozzarella cheese, parm cheese, fresh parsley, fresh basil (from my kitchen hydroponic garden) and sliced green onions.
Construction included:
Bed of noodles
Sauce
Waffle Meatball
Sauce
Mozzarella
Sliced yellow pepper
This goes under the broiler for 1 minute to melt the Mozzarella.
This is topped with
Diced parsley
Whole basil leaves
sliced green onion
And served. What a meal!!!!
