Don’s Gyro
This is my new take on a Gyro. I’ve been thinking about this for a while, and tonight I decided to dive in. Mostly because I was feeling lazy and I needed only 2 ingredients to complete it…lamb and a flat bread. I went with naan. I had everything else already. I had to get to trivia tonight and I didn’t want to spend half an hour in the grocery store.
So I bought a pound of ground lamb, put it in a mixing bowl and added garlic, basil, oregano, black pepper and kosher salt. I put on some vinyl gloves and mixed the heck out of it. I made to big, but thin patties and put them in the air-fryer at 400° for 20 minutes, rotated, and did 20 more minutes. This gave me that crusty ‘vertical spit’ feel I was looking for.
For my sauce, I took a cup of Greek yogurt, added the juice of one lemon and about a quarter cup of finely diced cucumber with a crush of fresh black pepper.
I set the meat aside to rest while I took a piece of naan bread, cut in half, and toasted in the air fryer for 4 minutes.
These went on a plate, the sauce on the bottom, the meat, the cheese, a handful of thin sliced sweet onion, a handful of cucumber, topped with feta and some green salad.
I folded each half up, and bingo…perfect bites every time. I actually had some pico de giao, that would have made it even better. Kicking myself for not adding that!
The result was an absolutely wonderful gyro, better than any that I’ve ever gotten at restaurants and food trucks. And I’ve had a lot of gyro’s in my life.
On a fluke, I bought some President feta, and I found it to be amazingly close to the wonderful, smooth and creamy Greek feta I really love.
This is now absolutely on my favorite meal list.
