Salmon Piccata
Salmon Piccata!
Tonight I give you a wonderful, very quick, easy meal of Salmon Piccata.
Ingredients
Two salmon fillets
1/2 cup dry white wine
1/2 cup chicken or seafood broth
3-4 cloves minced garlic
1 diced shallot
3-4 tbsps butter
1/4 cup capers
1/4 cup diced parsley
Seasoning for the salmon (I used garlic and onion powder, black pepper and a hint of cayenne)
1 Lemon for zest and juice
Directions
Season both sides of the salmon
Heat the pan over medium heat with butter and avocado oil, and add salmon to the pan.
Cook for 3-4 minutes per side until golden brown. Set aside and cover.
Sauce
Use leftover butter/oil to cook shallot and garlic add a tablespoon of lemon juice and a quarter cup of cappers and red pepper flakes (optional) to season the sauce.
Reduce your sauce down about 1/2.
Deglaze the pan with a half cup of white wine. Add the parsley.
Pour sauce over cooked salmon serve and enjoy!
