Faux Shrimp Alfredo!

If you’ve been following, you know I’ve been replacing cream, cream cheese or sour cream on most of my recipes, as they don’t agree with me. I’ve been replacing them with yogurt.

BUT, I haven’t made an Alfredo for years because of this. Yet, I’ve never tried a yogurt based Alfredo. Spoiler alert, it worked, or I wouldn’t be posting this.

In a cast iron pan I heated up a couple tablespoons of virgin olive oil (on medium-low) 4 cloves of crushed and diced garlic. I didn’t want to cook the garlic, I wanted it to infuse with the olive oil. After a few minutes I added my shrimp and slow cooked them.

While these cooked, I threw some Cantonese noodles into a pot of boiling water, they only take 4 minutes. I also heated up my side dish of peas.

When the shrimp looked cooked, I added a few tablespoons of Page 5% yogurt with a couple tablespoons of water, and stirred it all into a sauce. I added some black pepper.

I strained the noodles and plated them in a shallow bowl. I topped this with the shrimp/faux Alfredo mix, a light shredding of Parmesan cheese and a healthy amount of fresh ground black pepper.

This was served with some peas, cooked with butter and basil. The plate was garnished with garden basil.

I’ll add lemon juice in the future. Otherwise, spot on!
