Tuscan Herb Salt
Simple ingredients, great flavor
We heard about this on NPR’s cooking show Splendid Table, so this really isn’t from us. But it is GREAT. While I’m typing, the roasted chicken with Tuscan Herb is cooking and the smell is memorable. The writer says this is a classic Northern Italian herb combinations.
But this isn’t about the chicken, it’s about the salt. This isn’t about a singular meal, but something you can create and have ready to create any NUMBER of great meals. The chicken recipe (again, not ours) will follow.
This is a classic flavored Italian salt preparation that can be used anywhere you need to add salt.
Ingredients
Kosher Salt
Fresh rosemary
Fresh sage
Fresh garlic
Directions
Crush 2 cloves of garlic under a knife, remove the skins. Dice with 2 tablespoons of kosher salt till fine. Add about 1/2 a cut of both the rosemary and sage. Continue to mince all till FINELY mined. It takes at least 10 minutes.
We set 3/4s of this aside to dry (the salt will dry the herbs) and then 1/4 we used to cook the chicken. That comes in a further recipe (again, not ours, but it smelling GREAT).
When the herb salt is dry, pour it into a container to save for future recipes. Fish, chicken, beef, eggs…the chef says to apply ANYWHERE salt is required.
Meanwhile…the herbs are drying and the chicken is cooking and the smell is ethereal.
