Tacos
Sure, tacos have been done to death. But it our world, tacos always meant ground something and then cooked with standard taco stuff. For many, many years.
September, 2018, Don decided to make a GOOD taco, and to serve it with a solid Spanish rice and refried beans.
Taco ingredients:
Pound or so of boneless, skinless chicken thighs
Rub for the chicken:
Kosher salt to taste (1 tsp?)
Fresh ground black peper to taste (1 tsp?)
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika. divide with smoked if you have it
1/2 tsp cayenne
Toppings
Thinly sliced red onion ( use sweet if you’d like)
Shredded cheese of your choice. Mex blend is good, just jack is fine too
Diced avaocado
Fresh cilantro
Lime wedges.
Pace organic salsa
Faga yogurt (or sour cream)
Tortilla of your choice. We like small flour tortilla. Corn is fine. Heat as needed.
Directions
Coat the chicken with the rub. Grill if you can. Otherwise, cook in a HOT skillet.
Fill heated tortilla with meat and your toppings of choice. Squeeze on lime juice.
Serve with:
Just buy a can of Mary’s Black Bean refried beans. Put in a small saucepan with some water and heat. Killer stuff.
Don’s Mexican rice
Ingredients
Olive oil (2 tablespoons)
Jasmine rice
8 ounce can of tomato (we like fire roasted tomatoes)
Chili powder
Garlic
Directions
Put tomatoes in a food processor and puree.
Heat up the oil. Add rice. Cook, stirring. Reduce heat. Add tomato and minced garlic. Cover. Heat to boil and simmer for 20 minutes. Turn off, fluff rice and let sit covered for 10 minutes.
Serve Tacos, Rice and beans.
