Salisbury Steak Dinner

Salisbury steak.

I’ve never cooked this before, but this is a layered event. First, RedMeatMonday® was moved, much like mail delivery and trash pickup on the Point, to Tuesday.

And I wanted to cook something I’ve never done before. Growing up in the 70’s there were two TV dinners I liked, Salisbury steak and fried chicken. Both were served with mashed potatoes and a veggie mix of carrots, peas and corn.

So tonight I give you an upscaled Salisbury Steak served with roasted garlic mashed potatoes and a delightful ginger carrot with peas and corn.

And it was wonderful. This helps celebrate the cool weather that came through town tonight, as well.

For the first time, I air-fried my garlic. Usually I do this when I have hot oven or grill going. Tonight I cut the top off a bulb of garlic, poured on some olive oil and made a tray of foil. I cooked this at 350° for 20 minutes.

I boiled two baking potatoes, cut in slices, for 30 minutes. I drained these and added some half & half, the garlic and black pepper, mashed them and set them aside.

Meanwhile I made the steak. 1 lb of grass fed 90/10 angus. This was mixed with 2 tablespoons of Thai garlic chili paste, 1 small diced onion, 2 tbsp of soy sauce, 2 tbsp of minced garlic. Then 2 eggs, a cup of panko and two tbsp of whole seed mustard. Grind in some black pepper and salt to taste.

These were formed into slightly oblong patties and placed into a cast iron skillet with olive oil, heating on top of my griddle. Cooking this on a stove top would be fine. Cook till a crispy brown and flip. Then set aside.

Peal and slice your carrots, boil for 5 minutes. Add a tbsp of ginger, some honey and butter to make a glaze. Add a small can of drained corn and some frozen petite peas and keep on low to heat through.

In the skillet add a pile of diced mushrooms, add a little water and cook down. Dust with a few tablespoons of flour. Once they are browned nicely, add about half cup of beer (I used Guinness) and half a cup of broth. I used chicken bone broth because it is what I had.

Cook this down for about 10 minutes until it makes a nice gravy. Place the cooked steaks in and ladle the gravy and mushrooms on top.

Plate your garlic potatoes, lay a steak partially on the side. Spoon on your veggies.

Enjoy! I absolutely loved this meal!!! It took 2 hours, but it was worth every second.
