Chicken Gyros!

Chicken Gyros! One of the best things to come out of my kitchen!

Since we had some great gyro’s, I’ve been thinking about how to make my own. I bought this $16 spit/pan on Amazon to see if I could pull it off. And we absolutely did.

We bought an 8 back of chicken thighs. Placed each in a ziplock bag and pounded them flat, to about 1/4 inch. Using kitchen shears, cut these in half.

In a storage container we mixed this…

6 garlic cloves, minced
2 tbsp red wine vinegar
5 tbsp lemon juice
1/3 cup Greek yogurt
1/4 cup olive oil 1
1/2 tbsp dried oregano
1 tbsp onion powder
1 tsp ground cumin
1 tsp ground coriander
2 tsp sweet paprika
2 tsp chili flakes
1 tbsp kosher salt
2 tsp black pepper

Put in the chicken and blend well. Set aside for at least an hour, but overnight would be good too.

Oil down the spit with a coating of olive oil. Pile on the chicken. Bake this at 400° for about 2 to 2.5 hours. Check for the internal temp, and graze happily on the top portion, which will crisp up and cook early.

Meanwhile make your Tzatziki sauce.

1/2 English cucumber small dice
1 lemon juiced
1 tbsp olive oil
1 1/2 cups Greek yogurt
2 tbsp chopped dill
2 cloves of minced garlic
1 tsp kosher salt
Fresh ground black pepper

Also, make up your salad dressing.

1/4 cup red wine vinegar
2 tbsp lemon juice
3/4 cup olive oil
1 tsp dried oregano
1 tsp Dijon mustard

We toasted two pita breads in our air fryer when the chicken got to temperature.

Construction:

• Pita bread
• A few large pieces of lettuce
• A pile of shaved chicken
• Salad that was tossed with the dressing. Ours included mixed greens, chopped red onion and tomatoes.
• The Tzatziki sauce
• Feta crumbles

Fold and wrap in foil.

The result was magnificent! A pack of this was put in a bag and vacuum sealed and tossed in the freezer for a later meal.

Lots of work, yes. Lots of reward? Absolutely.
