Mojo Chicken with Black Beans, Jasmine Rice and a Mojo Salad

Tonight: Mojo Chicken with Black Beans, Jasmine Rice and a Mojo Salad.

This is absolutely a FEAST of a meal. And it is pretty simple.

While I do love making an authentic Mojo Sauce, and it’s not that hard, tonight we just bought one in a bottle. We took 3 chicken leg quarters and marinated them in the Mojo Sauce for 9 hours. Absolutely Google Mojo Sauce if you want to make your own. It is great.

This is my first time with this approach… air-fry the chicken for 45 minutes at 370°, and let it rest while everything else comes together. With heat off, it ends up in the air fryer for about 1 hour.

If you don’t have an air fryer, bake or grill as needed.

About an hour before dinner time, we began the beans. In olive oil, saute a handful of onions. Add a few tablespoons of garlic for about 30 seconds, then add a can of black beans with the water. Add about a tablespoon of cumin to this, and grind in a bunch of black pepper. Cook this down over a low heat. Add a handful of cilantro. Salt to taste.

Boil 1 1/2 up of water with a little butter, add 1 cup of jasmine rice, cover and bring to a low temp for 15 minutes. Bring up the heat to a steam for a few seconds, and then let rest for 5 minutes.

Meanwhile, make your salad. Dice up an avocado, a mango, some red bell pepper, halved cherry tomatoes, and cilantro. Toss this with a few tablespoons of the mojo sauce. Plate some green salad and top with the above.

Plate the rice with beans on top, the salad and of course, the chicken. Serve with sliced lime to put on everything!
