Grilled Swordfish with Parsley Pesto
Tonight, a grilled swordfish with a parsley pesto served with steamed cauliflower. A close friend shared this recipe with me, it’s from the NYTs. I planned to cook just one swordfish steak, thus I halved the recipe so I would have enough for me tonight, and a lot of pesto for the future. Half of that is in the freezer, the other half for a killer omelette and sandwich spread this week. Below is the full (not halved) recipe. Shrimp Scampi and Zucchini
Valentines deserves a nice romantic meal, and a classic is Shrimp Scampi. It’s one of those meals that is quick and easy to make (20 minutes tops) and is packed with flavor. Since I’m eating carb-lite these days, I switched out my usual angel hair pasta with spiraled zucchini. I’ll post a link to the spiralizer. Air Fried Eggrolls
Egg rolls for dinner tonight (part of my weekly Monday Charcuterie Night Tradition). This was a favorite of my girls. The new twist is air frying them instead of frying them in oil. You can bake them if you don’t have an air fryer, You can also brush them with butter. Ingredients: 4 Tbs Vegetable Oil: For sautéing 2 Garlic cloves: Minced fresh garlic 2 tsp Ginger: Fresh minced 1 cup Celery: Chopped 3 cups Coleslaw Mix 1 lb Ground Chicken: You can leave this out, or use pork or shrimp 4 tbs Fish Sauce: 4 tbs Low Sodium Soy Sauce 2 tsp Toasted Sesame Oil: Adds richness Garlic Chili Sauce (for dipping) 1 cup Green Onions: Thinly sliced 20-24 Egg Roll Wrappers Olive Oil Spray This makes 20-24 rolls. Jerk Chicken and Mango Slaw
Friday night’s dinner is Jerk Salmon served with a Mango Slaw, suggested by a close friend who found this on the New York Times. https://cooking.nytimes.com/recipes/1021305-mango-slaw This is a very easy meal to make, I halved the recipe. The slaw is simply a store-bought bag of cabbage slaw mix, (I used half a bag), 1/4 cup chopped cilantro, juice from a lime, 1/8 tsp celery salt, black pepper to taste and chopped fruit of 1 or 2 mangoes. Put these in a bowl and toss. Refrigerate for an hour. The salmon is even easier, season the salmon with some store-bought jerk seasoning (2tsps) mixed with olive oil (2 tsp) and paprika (1 tsp) and broil for about 4-6 minutes depending on the thickness. Air Fried Wings
Normally ‘Wings Again” wouldn’t merit a post. But tonight I went to make my wings and…I didn’t have any Frank’s Wing Sauce. I’m not sure how that happened, our team logician (Chase) must have miscounted the bottles in the pantry. But, I really wanted wings tonight. I bought the wings. And there’s not a lot you can do with wings…than make wings. So I made a sauce out of what I had on hand. And guess what. It was FAR superior to Franks…the de facto BEST sauce. Colcannon
My usual St. Patrick’s Day meal is my Dublin Sunday Corned Beef and Cabbage Dinner, but sometimes I like to round the meal out with another classic Irish dish, Colcannon,. Normally it’s simply mashed potatoes mixed with kale and butter, but to make it a main dish, I prepared mine with some ground lamb and veggies. I sauteed some baby carrots, yellow pepper, onions and some roasted red pepper in a skillet, then browned the lamb. That goes into a glass baking dish as a base. I boiled 4 potatoes and whipped them with a dusting of poultry seasoning, a healthy amount of black pepper and a couple tablespoons of Irish butter.
