Don’s Quazi-dila

Don’s Quazi-dila

I saw this crazy idea online and adapted it for my food. Yesterday I smoked a pile of chicken and pork. I made some killer tacos that evening!

Today I put out two tortillas on my prep area. Quick note here, I bought a stainless steel cutting board a couple months ago to try to get away from using my plastic boards. The whole idea of a plastic fork’s worth of micro-plastics in my brain effected me. So I use this for most of my kitchen work now.

I cut a slit on one edge of the tortilla. Then I placed some sauce (in this case a mix of Greek yogurt and hot sauce), then some basil from the garden (any green would be fine here), some of my smoked chicken, and then some cheese. I only had cheddar, but any cheese of your liking would be fine.

As I folded the quarters, as shown, I heated a skillet with some Kerrygold Butter. Medium high heat, but closer to medium.

Once folded, as shown, and the skillet hot, I added the quarters. Very much a quesadilla, but not quite. I’m calling it a Quazi-dila. Brown on each side. Turn off the heat and flip a couple times to heat through.

The cool thing is that you can use any 4 items you like/have in your fridge. Imagine tomatoes, spinach, Swiss cheese and yogurt. You get the idea! Zero carb tortillas. Use olive oil.

Tomorrow’s breakfast will be left-over Andouille sausage from a jambalaya, scrambled eggs, cheese and yogurt mixed with hot sauce.
