Pickled Chicken Wings

I’ve been seeing this online…pickled wings, but have largely ignored this. But when it came to do my first batch of wings in my new air fryer rotisserie tumbler, I wanted to do something new. A wing I haven’t cooked before, and a way I have not cooked a wing before.
I have no shortage of pickle juice in my life. I cook with pickles and I snack on pickles. I have 4 large jars of pickles in my life at any time. Usually Kosher Dills, as that is my favorite.
So today we dumped a pound of chicken wings into a bowl, poured all the juice I could spare on top. I added some dill. We covered it up, tossed it around and let it sit for 6 hours. We did turn it on occasion, maybe twice.
Then we put them in a colander and let the dry a bit, about 5 minutes. This went into a bowl. I added a couple tablespoons of olive oil and a fair amount of my seasoning (Don’s Rub), mostly salt, black pepper, oregano, paprika, onion powder and garlic powder. This got tossed well.
This went into the air fryer tumbler basket at 400° for about 30-40 minutes.
We pulled these, let them rest and then put in our fries. This was a single russet, cut and soaked for 10 minutes, the par boiled for 3 minutes (this happened while the chicken was cooking) and then dried. The fries were dried, put in a bowl with avocado oil and seasoned with a mix of black pepper, salt, onion powder, garlic powder and paprika. These went into the air fryer tumbler for 10 minutes as the wings rested. Kudos to our new french fry cutter.
The result was a fun, easy meal that was wrapped with a great sunset on the front porch.
